Đùi lợn thui qua cho cháy hết lông rồi cạo sạch. Đem rửa qua với rượu cho hết mùi hôi rồi xát với gừng.

Đùi lợn muối để nguyên, luộc nhỏ lửa với cà rốt, hành tây, hành boa-rô, lá thơm khoảng 30 phút. Vớt đùi lợn ra để ráo, lột bỏ lớp da, tẩm đường trắng quanh đùi heo để 15 phút cho ngấm.

Cho đùi heo vào đút lò khoảng 15 phút, canh thấy đùi lợn chín vàng đều là được. Bày đùi lợn ra đĩa lớn ăn với bông cải xanh luộc.
